Ingredients
BBQ Chicken
1 tablespoon olive oil
1 ½ to 2 pounds chicken breast
1 teaspoon salt
1 teaspoon garlic powder
1 cup barbecue sauce (Stubb’s Original recommended)
⅓ to ½ cup water

18 oz bag Cantina Style Tortilla Chips
16 oz bag Fiesta Style Cheese, finely shredded

Instructions
Preheat the oven to 400°F (200°C).
Cook the chicken: Add olive oil to the pressure cooker and place chicken inside. Pour water over the chicken, sprinkle with garlic powder, salt, and pepper, then pour BBQ sauce on top—no stirring needed.
Pressure cook: Place the lid on the cooker, turn vent to Sealing, and pressure cook for 10 minutes.
Prep the nachos: Line a large baking sheet with parchment paper. Layer tortilla chips, then sprinkle evenly with shredded cheese.
Release pressure: When the pressure cooker beeps, allow a 10-minute natural release, then quick release any remaining pressure.
Shred the chicken: Remove lid, shred chicken using a hand mixer, and add extra BBQ sauce if desired.
Melt the cheese: Place nachos in the oven until cheese is melted and bubbly, about 5 minutes.
Assemble: Remove nachos from oven and top with shredded chicken, additional BBQ sauce, and the Smoky Ranch Salad Kit.
